The Swedish Cooking Group during 2016-2017 will focus on (drum roll please) SMORGASTARTA

Smorgastarta (Swedish: Smörgåstårta, "sandwich cake") is a dish of Swedish origin popular in Sweden, Estonia (as "võileivatort") and Finland (as "voileipäkakku"). It is a savoury cake that is similar to a sandwich, but with large amounts of filling and garnish, similar to a layered cream cake.

A smorgastarta is normally made up of several layers of white or light rye bread with creamy fillings in between. The fillings and toppings vary, but egg and mayonnaise are often the base, additional filling may vary greatly but often includes one or more of the following: liver pâté, olives, shrimp, ham, various cold cuts, caviar, tomato, cucumber, grapes, lemon slices, cheese and smoked salmon.

Smorgastarta is served cold and cut like a dessert cake. The types of sandwich cakes vary from meat, fish, combinations of cheeses and meats to vegan. The top garnish often reflects the ingredients used as a filling. Voileipäkakku (in Finnish) is part of family gathering dishes from birthday parties, weddings or funerals in Finland.

Do you enjoy the many TV shows and Netflix shows featuring chefs? Do you binge watch Alton Brown and Anthony Bourdain? Or are you true to Julia Child? Or being Swedes are we secret fans of the Muppet Swedish Chef?!

Here is a rare opportunity close at hand! And a very unique, educational, historical opportunity!

The local Historic Foodies Group invites the Swedish Club Cooking Group to join them for their monthly meeting, Wednesday, June 28, 6 PM (till approximately 7:30). They will enlighten us by learning about and viewing The Louis Szathmary Culinary Collection in Special Collections of the U of I Library. You are invited to bring a guest. If you have a historic cookbook you are welcome to bring it.

Historic treats will be served by the Historic Foodies Group.

RSVP 2 weeks before the party to Jeanne.

Thanks to Jan Erickson for bringing the Historic Foodies Group to Jeanne’s attention.

Facilitator: Jeanne Nelson.
